Strawberry Coulis
There are so many ways to use this strawberry coulis – on ice cream, cheesecakes, yogurt or added to fresh lemonade for a fruity flavour. A coulis is lighter in consistency compared to jam and makes an easy addition as a topping.

INGREDIENTS
- 350g strawberries
- 75g sugar
- 2 teaspoons of fresh lemon juice
INSTRUCTIONS
Strawberries: Wash and quarter.
Preparation: In a pot, combine strawberries, sugar and lemon juice on medium heat and bring to a boil. Make sure to stir occassionally.
Turn down heat to low and allow to simmer for 10 to 12 minutes, until slightly thickened. It will continue to thicken as it cools. Place mixture in a blender and blend until smooth. Pass through a strainer to remove any seeds. Allow to cool before serving. Coulis can be stored in the refrigerator for up to 3 days.
