Strawberry Clafoutis

Clafoutis is like a pudding, soufflé, and flan all in one. This French dessert is typically made with cherries, but the simple ingredients of sugar, eggs, and milk also go very well with strawberries. The aroma of this fruit and custard combination baking makes it an irresistible treat to enjoy. It’s so full of flavour and so easy to prepare.

INGREDIENTS

  • 400g of strawberries
  • 40g butter, softened
  • 3 eggs
  • 300ml milk
  • 60g cornstarch
  • 80g sugar
  • 100g flour
  • white powdered sugar, optional
 

INSTRUCTIONS

Oven: Pre-heat oven to 180°C (356°F).

Strawberries: Hull and quarter.

In a bowl, combine eggs, milk, cornstarch, sugar and flour with a whisk until smooth. Butter a baking dish and distribute the strawberries in a single layer.  Pour the prepared batter over the strawberries. Bake for 30 minutes. 

Allow to cool for 10 minutes and serve warm with a light dusting of powdered sugar.
