Strawberry Marscarpone

Need an easy dessert idea? This is a recipe that will be sure to please any crowd. Fresh strawberries and mascarpone make this a light treat. The biscuit can be substituted with speculoos for a Belgian twist on this dessert.

INGREDIENTS
- 250g strawberries
- 250g marscarpone
- 150ml crème fraîche
- 20 grams of vanilla sugar
- 10 biscuits of choice (bastogne or spéculoos)
INSTRUCTIONS
Strawberries: Wash and cut into quarters.
Biscuits: Break up into smaller pieces (about 2 biscuits per verrine plus more for decoration).
In a bowl, combine marscapone, crème fraîche and vanilla sugar together with an electric mixer. If you are short on time this can be done by hand by the mixer will give a lighter result.
Spoon the marscarpone mixture into the bottom of the verrine. Add a layer of biscuits and then strawberries. Place another layer of the marscarpone mixture and top again with biscuits and strawberries for decoration. Et, voilà!
